Baked Courgette and Salmon Parcels


Ingredients:


2 salmon fillets (small)    

3 small courgettes
2 tablespoons olive oil
3 cloves garlic, minced
1 lemon, thinly sliced
2 teaspoons Dijon mustard
Salt and black pepper to taste
 Fresh dill for garnish
 Aluminium foil


Instructions:



        1.      Preheat the Oven:
Preheat your oven to 375°F (190°C).
      

  2.      Prepare the Courgettes:
Wash and trim the ends of the courgettes. Cut them into thin slices or ribbons using a vegetable peeler or mandolin.
    

    3.      Create Salmon Parcels:
Cut two pieces of aluminium foil, large enough to wrap each salmon fillet with courgette slices. Place a salmon fillet on each foil piece.
      

Season well

 

  4.      Seasoning Blend:
In a small bowl, mix olive oil, minced garlic, Dijon mustard, salt, and black pepper. Brush this mixture over each salmon fillet, ensuring they are well-coated.
      

  5.      Courgette Layers:
Arrange courgette slices on top of each salmon fillet, slightly overlapping them. This creates a flavourful and moist layer during baking.
      

  6.      Citrus Infusion:

Instructions:

        1.      Preheat the Grill:Preheat your grill to medium-high heat.

        2.      Prepare the Courgettes:Wash the courgettes and trim off the ends. Cut each courgette lengthwise into spears.      

  3.      Garlic Infusion:In a small bowl, combine the minced garlic with olive oil. Brush the courgette spears with this mixture, ensuring they are evenly coated.       

4.      Seasoning Magic:Sprinkle salt, black pepper, and dried oregano over the courgettes. These seasoning add a burst of flavour and complement the natural taste of the courgettes.
